Our Umbria Michelin Retreat is set in a gorgeous hilltop 17th Century Church and Rectory turned rustic villa, with a large pool, and olive grove in the middle of the countryside.

Umbria is ideal for soaking in the true Italian experience with some of the oldest medieval towns in Italy. Known as a top culinary region in Italy, your retreat will include world-class culinary experiences with the Michelin Star Chef Delfo Schiaffino, Sommelier Rachel van Weringh, and Italian Nonna Teresa Maria Silveri.

UMBRIA: 17TH CENTURY RESTORED CHURCH VILLA

  • Built in the 17th century and previously a Church and Rectory for the priest, this beautifully restored rustic villa and large pool is set on top of a hill with a 360 degree view of it’s garden, olive groves, and the Umbrian countryside.

    Nestled in a protected natural landscape, surrounded by breathtaking scenery, the mountain we sit on top of is known for its wild truffles and offers a spectacular stargazing experience on clear nights. The surroundings are stunning with ancient oaks, fragrant wildflowers, olive groves, fruit trees, and herbs.

    A true oasis of peace and tranquility, yet only a short ten-minute drive away from markets, restaurants, bars, and cultural heritage sites. The area is abundant with lakes, natural wonders, and sporting activities, for whatever adventurous opportunities you want to explore.

  • Umbria, also known as the “Green Heart of Italy”, a region characterized by nature, hills and beautiful landscapes of olive groves, dense forests and hills.

    Umbria overflows with Etruscan ruins, pretty medieval hill-towns, and is known as being one of the top culinary regions in Italy. Famous as the region of olive oil, salami, lentils, truffles, chocolate and wine – its restaurants delight in making the most of the local produce, washed down by phenomenal wines.

    More traditional, off-the-beaten track in comparison to it’s neighbor Tuscany, Umbria is sometimes described as ”undiscovered”. You can expect a more authentic Italian experience in Umbria with beautifully preserved and lesser traveled medieval towns. Umbria is perfect for travelers who enjoy a slower, more laid-back pace.

  • Umbrian cuisine is a celebration of the home, with dishes that embrace simplicity and authenticity. It’s unique terroir has given rise to cured meats, earthy truffles, flavorful olive oils, beautiful silky chocolate and full-bodied wines.

    It’s villages and medieval towns are dotted with charming Trattorias and family-owned Osterias where the aroma of slow-cooked stews and fresh pasta, like the local 'Strangozzi,' wafts through the air. From the robust flavors of Cinghiale to the earthy notes of truffle-infused dishes, Umbrian fare reflects the region's agricultural roots and a deep connection to the land.

    Umbria's rolling hills are covered by olive groves and vineyards. The region produces some of the finest Extra Virgin Olive Oils in the country and was the first Italian region to receive the DOP designation for the entire territory. The region also yields world-class wines, with Sagrantino standing as the star red and Orvieto, its crisp, iconic white wine.

DELFO SCHIAFFINO: 3* Michelin Sous Chef and 1* Michelin Executive Head Chef

To Delfo, cooking is a form of storytelling. I tell a story that reflects his uniquely German and Italian heritage, his experiences, and his philosophy on celebrating the natural textures, and flavors of hyperlocal ingredients.

Delfo has worked alongside some of the most esteemed and reputable chefs in the industry. He has been a Sous Chef of 3 Star Michelin La Pergola*** in Rome, 3 Star Michelin Jonnie Boer at De Librije***, and Browns Hotel Mayfair.

Currently, he is the Executive Head Chef of 1 Star Michelin St. George by Heinz Beck* in Taormina, Sicily, where his exceptional culinary skills earned him not just once, but twice a Michelin star.

Our experience will not only include a private tasting menu dinner curated by Delfo, but also a hands-on Michelin Star Chef Cooking Class where you will learn the skills to master elevated Italian cuisine.

RACHEL VAN WERINGH: Sommelier Level 4

Rachel is a dedicated host and Sommelier born in the Netherlands with a specialization in wines.

After completing her Level 4 in wine studies at the Wine Academy of the Netherlands, she started her own wine company in the Netherlands and worked as a wine educator, but it has always been her dream to move to Italy.

In 2021, she started a new adventure in Sicily, working at a winery on the slopes of volcano Etna. Rachel's passion for wine comes from the unique producers and stories behind each vintage. She shares her knowledge and passion about wines without overcomplicating it, believing that wine is meant to be enjoyed with good food and good company. 

TERESA MARIA SILVERI: Italian Nonna

Teresa, born in the vibrant Trastevere quarter in Rome in the 60's, moved to Umbria about 30 years ago. Together with her husband, she lives on the mountain next to our villa.

An Italian Nonna that has raised two children and now grandchildren, she is dedicated to making food the traditional way. Teresa cultivates her own vegetables, herbs, fruits, grains, chickens and eggs and still uses very limited electricity and cooking with a wood oven.

An expert in traditional handmade pastas, fresh bread, and slow-cooked Umbrian meals. While she speaks a only a bit of English, her food conveys her love and passion.

FAQ

  • Transportation, daily breakfast, all activities and meals in the itinerary, and additional Wifi.

    Flights are not included.

  • For our 8 day retreats, all guests will have free time during the day to work as they please as most activities are in the evening or weekend.

    For our 4 day retreats, activities will be throughout the day so there will only be pockets of work time. Of course, you can participate as you prefer and if you have specific schedule accommodations, please email (admin@nomad-home.com)

  • Yes. Please send us an email and indicate what room you’d like, who you would like to be in the room with, and we will take it into consideration in the selection phase.

  • Yes. Please let us know your room preference and we will work to pair you with another guest if you both select a shared room.

  • The trip pick-up and drop-off will be at the Bordeaux airport, a 2 hour drive from our villa. Transportation is organized from that specific location, if you have a custom request, we will try our best to help coordinate; subject to additional cost.

  • Yes, the minimum age is 21 years old for all stays.

  • Please verify the entrance requirements for your respective country. Many countries are able to have a tourist visa issued at no charge upon arrival. When entering the country, we suggest selecting ‘vacation’ on the immigration form and using the villa’s address; provided at the time of booking.

  • There is a village about a 15 minutes walk away with the daily essentials, grocery, and restaurants. All tours will have transportation included. If you wish to have your own transportation during weekdays, you can rent a car or bike for personal use.

  • We will try our best to accommodate dietary restrictions, however require time to plan the options with food/tour providers. Please send us an email with your requests and we will inquire on your behalf: admin@nomad-home.com

  • If cancelling a booking within 48 hours of placing your booking you will receive a full refund. Please note, the 24 hour period begins when you place your initial booking.

    Cancellation after this period incurs cancellation fees, depending on how far in advance you cancel.

    If cancelling within:

    90 days of the retreat start date - the 1500€ deposit is non-refundable

    Within 60 days of the retreat start date - 50% is non-refundable

    45 days of the retreat start date - 100% non-refundable

  • Yes. If chosen as a participant, a 1500€ deposit is required before the remainder of the payment 60 days before the retreat start date.
